••• 12••• Messewelten How a bakerwill become a computer nerd iba offers a wealth of digital solutions to control production and make shopping an experience U sing digital tools, craft bak- eries and confectioneries organise operations, plan shifts, control production, ensure great- er efficiency, and create scope for employees to develop their skills. They also offer their customers comprehensive service and infor- mation about their products. Iba shows what possibilities digitisa- tion can offer the trade. Digitised bakeries can connect the various divisions of artisan busi- ness and make use of the advan- tages of digital tools. For instance, modern software is used for shift planning. The system suggests the best solution for planning the respective day. It also automati- cally records and documents the working hours, breaks, and re- sponsibilities of the employees. Digitally supported needs analy- ses and forecasts also help with planning the production and product range for the compa- nies: which goods were and are expected to be ordered on which day, how much dough has to be prepared, which baked goods must be produced? The software solutions also allow for planning around the weather, holiday pe- riods, and bank holidays: a sunny weekend means an increased de- mand for bread and rolls – while there is less demand for sweet pastries and cakes during lent. While the bakery manager used to estimate the need based on his experience, there is now reliable data and less overproduction. IT tools can also help the other way around: if an item is running low, the till automatically forwards the information to the bakery. Together with the pre-orders, the forecasts are finally forwarded to the bakery and turned into a digi- tal baking sheet. There, weighing most raw materials is automated. This process is more reliable, be- cause a machine does not get the measurements wrong. Another advantage: it’s possible to move some of the work from the night to the day shift which may attract more young people for this job. Digital aids are also available at the counter, for example the till can have all the information about products, raw materials, and possible allergens, which al- lows staff to give detailed an- swers to queries customers may have. It is also possible to install touch panels which enable cus- tomers to find information them- selves, or displays showing prices and product information. Accord- ing to marketing experts, large, wall-to-wall screens with the lat- est offers, mouth-watering eye- catchers, or insights into the bak- ery are becoming more and more popular. Shopping is becoming an experience, also thanks to digital tools. At iba, around 50 exhibitors working in the areas of shopfit- ting, equipment, and other interi- or design for bakeries will be pre- senting their ideas and concepts. Auf der iba präsentieren über 180 Firmen Lösungen und Neuheiten in Sachen Ver- packungstechnik und -material, davon über 50 Aus- steller gebündelt auf der Fläche „iba.OPERATE! Pa- ckaging & Processing Solutions“ in Halle B1. Da dreht sich alles um Verpackungslösungen, -prozesse und -materialien für Großbäckereien, Hersteller von Teig- lingen, Handel, Süßwaren- und Zuliefererindustrie. „Nach der erfolgreichen Premiere auf der iba 2015 und dem sehr guten Feedback von Ausstellern und Besuchern fassen wir Verpackungslösungen und -prozesse für Produkte wie Brot, Gebäck, Süßwaren, Snacks, Pizza, Torten, Teiglinge, Kekse und Riegel auch diesmal auf einer Fläche zusammen“, erklärt iba-Projektleiterin Claudia Weidner. „Auf iba.OPERA- TE! erhalten Besucher alle Informationen und finden dort die passenden Partner für ihr Unternehmen.“ In einem weltweiten Markt, in dem Logistik und Trans- port immer wichtiger werden, ist der Bedarf an ge- eigneten Verpackungslösungen groß. Dabei müssen diese gerade bei Lebensmitteln zentrale Aufgaben erfüllen: Die Produkte sollen geschützt werden, frisch und haltbar bleiben und die Vorschriften zur Lebensmittelsicherheit müssen eingehalten werden. Dazu sollen die Prozesse effizient sein, denn bei ho- hen Stückzahlen ist Geschwindigkeit entscheidend.
